Bon Appetit! Recipe of the Week: Reese's Peanut Butter Bars

By:
Jill Meier, Journal editor
My favorite candy bar is a Reese’s Peanut Butter Cup – well, that, and Milky Way’s Simply Caramel runs a close a second. Let’s just say, if offered, I wouldn’t turn either down. That leads me to this week’s recipe, Reese’s Peanut Butter Bars. The sweet treat requires just a few simple ingredients and no oven is required. Instead, it’s the microwave’s turn to cook. I spied the calories-galore recipe several years ago in a cookbook from my home church in Minnesota, and ever since, it’s become a family favorite at Meier gatherings.

Reese’s Peanut Butter Bars
1 cup butter or margarine, melted
2 cups graham crackers crumbs
2 cups powdered sugar
1 cup creamy peanut butter

Topping
1 ½ cups milk chocolate chips
¼ cup peanut butter

In medium bowl, stir together graham crackers crumbs, powdered sugar, peanut butter and melted butter/margarine. Press firmly into the bottom of a 9x13-inch pan. Melt chocolate chips and peanut butter in the microwave, stirring occasionally. Spread melted chocolate over the crumb crust. Chill for one hour and then cut into squares. And finally, enjoy!
